Strawberries provide a good amount of vitamin C, are low in calories, and are easier on your blood sugar than some other fruits. Purchasing locally grown fresh strawberries ensures that you are getting the most nutrition from your produce. This is a quick and versatile recipe that can pair with Greek yogurt for a light dessert, or you can place it on top of your favorite salad greens.
Ingredients
16 ounces fresh strawberries
1 ½ tablespoons balsamic glaze (prepared or recipe follows)
Pinch of black pepper
1 sprig of fresh tarragon
Balsamic glaze
1 cup balsamic vinegar
¼ cup brown sugar
Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil.
Reduce heat to low and simmer until glaze is reduced by half and coats the back of a spoon, about 20 minutes.
Let cool, then pour into a lidded jar. Seal and store in the refrigerator.
Instructions
In a large serving bowl, combine the strawberries and balsamic glaze.
Grind the black pepper on top and gently mix.
Garnish with tarragon.
